Beijing cuisine is a
result of the combining styles from chefs who came from all over the country to
cook for the royal court; Hebei, Shangdong,
Lower Yangzi River area, Inner Mongolia, and Xinjiang. Hence Beijing dishes are
usually dominated by meat - the staple of the ruling classes. The most
popular methods used in Beijing cuisine are roasting, frying, stewing, braising,
and steaming, hence Beijing dishes are usually crisp, succulent and has a
refreshing flavor. Beijing roast duck is perhaps the best representative
of the Beijing food emporia.
As a great
international city, Beijing also offers a variety of Western and non-Chinese
cuisine which should satisfy visitors of any palate. Well-known Western
franchises such as McDonald's, KFC, Pizza Hut, Starbuck, Subway Subs and Dunkin'
Donuts are also easy to find throughout the city.

Beijing Roast Duck
Beijing Roast Duck is the epitome of Beijing cuisine and is well known both
at home and abroad. The dish is mostly prized for the thin, crispy skin,
with authentic versions of the dish serving mostly the skin and little meat.
Mongolian Hot Pot
Next to Beijing Roast Duck, Mongolian Hot Pot is another best example of
traditional Beijing dish. The slices of different meats are dipped in
boiling water as well as various kinds of vegetables until they're done, and
then eat with special sauce and side dishes. This dish is especially
favored during the cold season.
Bifengtang Prawns
This dish is prepared by frying prawns with coil and take them out until prawns become
golden red. Then they are cooked with Hong Kong's Bifengtang special techniques.
This dish is delicious and slightly spicy, with a pungent garlic aroma.
Gong Bao Ji Ding
Gong Bao Ji Ding is a
spicy chicken dish with peanuts and other vegetables. For some reason this dish
is never the same from one restaurant to another. Perhaps this adds to its
appeal as it is very popular with foreigners.
To Doe Zi
This dish is for potato lovers. The potatoes are stir-fried with some
green peppers and seasoning, and can be served hot or cold.
